Cuisine of India, like its people is rich in variety and has evolved over centuries influence of the Indian cuisine is obvious in Thai, Chinese, Caribbean and Middle Eastern specilities dishes . Modern Indian cuisine developed in the imperial courts of Delhi, Kashmir, Hyderabad and Lucknow is influenced by a vast range of regional specilities made with a variety of indigenous and exotic ingredients. Most dishes served at RASOI are derived from traditional recipes developed by chefs. (Rasoia ) and our grandmothers in household kitchens ( Rasoi ). Various regions of India share a common culinary heritage, for example, spiced lentils, rice and coconut in South India, chilli hot robust vegetarian curries, lentils and cereals in Western India, spicy seafood ( fish and prawns ) with coconut and rice along the coastal states, Biryanis, Kababs and fancy breads (parathaas ) of Central India, Tandoori dishes of Punjab and delicacies ( morel mushrooms, saffron and lotus roots )with garnishes (nuts and raisins) of Kashmir. Eateries in India started as roadside Dhabas which catered to the weary travelers and these Dhabas still flourish along the much traveled Indian roads. Indian food is generally served as a 3 or 4 course meal :- 1) Shuruat or the beginning which consists of an appetizer or a salad. 2) Main course which consists of 1 or 2 entrees (one meat and one vegetarian) 3) Side dishes are rice and lentils or gravy and if you like,yogurt. 4) Desserts to soothe yor tittllated tounge. It is costomary to enjoy a mouth freshener MUKHWAS. While it is costomary for Indians to eat with thier fingers, we do provide Cutlery. We would suggest that you try eating at least some of our food , like the Tandoori dishes with your fingers and we shall provide finger-bowls with lemon and warm waterso you don't have to leave the table to wash your hands.
